The San Bernardo is a rare, dwarf mutation of the heirloom Typica variety. Originally discovered in Guatemala as "Pache," it has found a highly prized niche in Colombia's Huila and Tolima regions. Known for its exceptional cup quality, it consistently scores between 85.5 and 87.5 in specialty evaluations. 

 

 Flavor Profile & Characteristics

Because San Bernardo is a direct descendant of Typica, it boasts a remarkably complex and floral profile. 

  • Tasting Notes: Common flavor notes include cocoa, honey, sugarcane, cinnamon, and various citrus (orange, lemon) and stone fruits (prunes, cherries). 
  • Body & Acidity: Features a vibrant acidity, syrupy body, and a clean, lingering finish. 
  • Agronomy: The tree is short in stature ("dwarf"), allowing for dense planting, though it yields significantly less than commercial Colombian varieties.
