Honey coffee is not a specific coffee variety but rather a processing method used after harvesting the coffee cherries. It falls between the washed (wet) process and the natural (dry) process in terms of how much of the coffee cherry’s mucilage (the sticky, honey-like layer around the bean) is left on during drying.
