CASTILLO Variety of Coffee
The Castillo variety of coffee was developed by the Colombian Cenicafe agency to combat the plants being susceptible to leaf rust. The agency worked over 20 years to develop this variety of coffee. The agency used natural selection and typical cross breeding techniques to find the best of the Robusto and Arabica varieties of coffee. The plant lives best in the high altitudes of the Colombian mountains.
This variety is known for its smoothness, acidity, and aroma with caramel and chocolate notes. This coffee is best for espresso, “tinto”, and those who like a splash of milk. This allows the natural sweetness to come through.
